Dawn of the dead is good but the original george romero version is better than the more recent version. Evil Dead is good too but kind of campy not a serious type horror flick. Hellraiser 3, forget that one and see the original hellraiser, the sequels just got progressively worse in my opinion.

If you are talking the originals, Dawn Of The Dead is definitely the better film, mostly because it was much more than just a horror story, it was also a social commentary. But, the remake is also very well done, with some really good effects and surprisingly well developed characters.
Evil Dead is a true classic though, even though it is very very very low budget. It mixes horror with comedy very well (although the two sequels Evil Dead 2 and Army Of Darkness are much more comedic than scary).
Hellraiser 3 for me isn't worth mentioning. Yes, it's a Hellraiser film, and the last one Clive Barker had anything to do with, but it's more of an action film than a horror film. The best Hellraisers are the first two. After that, the sequels get creepy, but not very scary. And some of them aren't even interesting.
So, I say it's a toss up between Dawn & Evil Dead. Watch em both.

I would have to say Evil Dead because it is a old classic and to me the older horror movies are the best
