Potatoes are 99% water and 1% potato?

you have 100 pounds of potatoes you set them on the back porch.
when they dry out they should weigh about 1 pound.
well not dry out completely.
as they dry out the water begins to evaporate,
after a while they enough water has evaporated so that the potatoes are now 98% water.
they would be lighter but how much lighter.
