after a while they enough water has evaporated so that the potatoes are now 98% water.

They would be lighter by one lb. If 100 lbs of non dehydrated potatoes are 99 % water and they weigh 100 lbs. if they are now 98 % water they have lost 1 lb.

100% = 99% water and 1% potato
100 pounds of potatoes dry out 1 pound.
so each 1% is one pound.

98% is ? pounds

if there was 200 pounds of human sitting on the porch and they dried out in the sun, there'd be 60 pounds of human left
