Because EA doesnt have the marketing contract with MLB anymore and thats why they make college baseball games instead, i think.

They lost their rights to Major League Baseball. The only big name ones that are around are MLB2Ks and MLB The Shows. They can still provide College Baseball games.

Yes, they did lose the rights to the MLB ... but not the NCAA, so last year they made MVP 06 NCAA ... and this year they have come out with the 07 edition of the NCAA version.
