I would recommend doing a lab on pigments- like in corn, carrots, green vegetables, and others. I seem to recall a similar lab from my past- why are deciduous trees green for most of the year and change colour in the fall? This may be a good one for you to explain to your class.

What grade are you in? If you are in 8th or below, try this:
The effect of putting cut white carnations into colored water. What will happen is the xylem will suck the water up through the carnation along with the food coloring you will put into the water. It will turn white carnations the color of the water.
