The definition of diffusion is the movement of molecules from a high concentration to one of a low concentration. The cell membrane is a barrier that will allow water through it but not larger molecules like sugar or salt. So when you add these materials to the water you are causing the concentration of water to decrease in comparison to the concentration of water on the other side of the membrane without the sugar. So according to the physical laws water will move from a high concentration across the membrane into the the area of lower concentration trying to equalize it.

An equilibrium means that opposing processes are occuring in opposite directions at the same rate. When you dissolve something on one side then the water is hitting the membrane less often. This causes a net result of water coming from the other side.
