Vinegar is made from fermenting distilled alcohol (like ethanol, wine, etc). It is derived from French which means sour wine (vin aigre).

As far as is possible to tell, vinegar was not "invented," but accidentally developed much like cheese or bread yeasts. Its use in history was so widespread that it's impossible to pinpoint just where it originated, but Egyptians, Babylonians and the Chinese were familiar with it
What is it, though? It comes from alcohol as a secondary fermentation in which bacteria (acetobacter aceti) converts alcohol into acetic acid. Vinegar is made from many foods - mostly grains such as rice and barley and fruits like apples, berries and peaches, but including such various foods as honey, potatoes and whey.
In the process, vinegar produces "mother," which is cellulose produced by the bacteria that make vinegar. Most vinegar that you buy will have been pasteurized to prevent mother from forming, but it may grow again anyway after the container has been opened at home.

It's harmless; you can continue to use the vinegar with no harm whatsoever from the mother, but you may filter it out if you like. Pastuerization is not necessary at all to extend the life of vinegar, as the keeping power of vinegar is, in itself, virtually indefinite. It simply does not spoil, and although color changes, haze or sediment may occur, it's still safe for any normal use.
"Raw" vinegar - unpasteurized - is touted to be superior for medicinal and personal hygiene as well as food use and for good reason. Pasteurization, which is simply subjecting a product to heat, destroys heat sensitive vitamins and enzymes. Raw vinegar is quite expensive in comparison to pasteurized vinegar, but for personal and internal uses, it's worth the extra cost.
White distilled grain vinegar is the most commonly bought, but should not be used as a food or medicinally because the process of distilling removes nutrients. Claims have been made that it actually demineralizes the body, drawing minerals from the body instead of adding to it.

What went wrong is that he formed his conclusion before he did his experiemnt. If his premise was "which one is better?" The experiment would have been a success. Also to be a real experiment, you need to have more than one of each.
