I have a disabled daughter, so I can relate to her needs.
I work at home because of my situation. They also know that once a week I am gone all day to drive her many miles to see her doctor. I do my hours, just really early and really late.
She could ask for a telecommuting position. She would simply work at home for a set salary. She would do the work when she could, making time for both career and her child.
Other then that she could offer to make up time on weekends or after work.
She is in a really hard position. Her child truly needs her, but she also needs her job to support him. It is pretty sad that a colege complained, but I can also see their point, they are working full time and she is not.

If your girlfriend works for a company with 50+ employees, she is entitled to Family and Medical Act Leave on an intermittent basis. She will need a statement from her son's health care provider that she is needed to assist with his care. The total allowable (unpaid) leave time is 12 weeks, taken either all at once or on an intermittent basis.
It's nice that she has a stand-up guy like you looking out for her. Good luck.
