The Conch represents order and society. The breaking of the conch represents a descent into chaos.

Monc's right. The shell represented order more then innocence. In keeping order it kept civilization, also you will notice that piggy has a great fondness for conch. Piggy himself is a direct link to civilization with his specs. And as the the breaking of the conch meant a loss of order, the death of piggy ultimately could mean the descent into chaos. (also the breaking of Piggy's specs and then when the fire is stolen is also linked to civilization)

From what I remember of highschool english class... when the boy picks up the conch and blows on it, he has assumed the role of an adult..therefore losing his "innocence"
