why are rocks crushed prior to being processing?

By processing do you mean to extract metals?
By crushing ore to a minimal size will increase the surface area. By doing this it allows the reagents to get a hold of each individual particle for floatation processing. The ore can then be concentrated by the specific gravity of the target mineral.

For road repair the crushed rock will press in to the dirt and stay much better than round rocks.

Rocks break when they meet their elastic limit. The rocks have an elastic limit and if they pass that they will break. an elastic limit is a point where an object can bend to.
