When a food company gets ready to design and distrubute a new food, they have to burn the food in a lab and the energy released in heat is calculated in calories, so the calories listed in food does not take into account chewing, swallowing, or digesting (which is why sometimes people call certain foods "negative" calorie foods because it is thought that the energy needed to digest the food is greater than the energy in the food itself.)
