The war was ongoing for 2 years in Europe, and 4 years in Asia before the US ever joined. There are plenty of topics in those areas, and many others even after the US joined:

1) The role of neutral countries (Spain, Switzerland, etc.).

2) The Japanese invasion of first Manchuria, then China, and how that eventually led to the Chinese civil war & Communist takeover.

3) The role of British colonial soldiers (Indian, African) during the war.

4) The Dutch or Polish resistance movements (since the French resistance has been done to death).

5) Yugoslavia's near civil war while under German occupation.

6) The near destruction of the Gypsies and Romani culture.
