For the same reason it can stay upright on any other day of the year - the surface of an egg isn't completely smooth - it has bumps, and with a little patience you can get most any egg to stand on its end.

Because you put a pinch of salt under it before standing it up.
This also works well on the 30th of March, every other Tuesday, and on the birthday of anyone called "Susan". It has nothing to do with the equinox!

Some eggs can be balanced on their ends on a hard, flat surface at any time of the year. It depends on the roughness of the egg shell , the steadiness of the hand and patience.
