That is a good question.
Your choice would be based on what type of games you are planning on playing.
Each card will be better at certain games than the other.
The 512Mb card will probably perform better for RTS games such as Empire Earth II or similar. Games with a lot of individual characters spread out over the screen.
The 256 card, with it's higher clock speeds and more pixel and texture pipelines will probably perform better on games such as Half-Life 2, F.E.A.R. or other first-person shooters
Normally, for this type of question, I like to refer people to Tom's Hardware guide and their VGA charts. But the 7600gs you mention is not on their list. I will link it anyhow...

Speed is definitely essential for gaming. All the memory in the world wont help you if you cant access it fast enough. 256MB cards have been the standard in gaming since BF2 and Far-Cry. The reason is simply that it works. But if I were you I would be looking at a line of cards that supports SLI mode that way you could always bridge them for more graphics processing power (although your motherboard would have to be SLI capable). Personally I would recommend the XFX 7900GS. Its a pretty quick card and its under 200 bucks. It performs just about well as the 7900GT, most people wont notice the difference unless you are running benchmark software. And if your looking for PC components Newegg is the place to shop.

7600 GT - the 7600 GS is actually a refresh of the 7300 GT - the 7600 GT is a superb piece of hardware - RAM doesnt matter if the card doesnt have enough horsepower to use it anyways - but just for the peace of mind of futureproofing, why not dump an extra 20 bucks for a 7900 GS 256mb, which is an amazing card for what its worth. Also try the ATI Radeon or the X1950 GT (or X1950 Pro if you really want some horspower)
I myself have a 512mb 7950GT, and I do not regret spending the extra 150 bucks, cause its worth it =)

Go for the speed. If your system has enough RAM you'll never actually use the full 256 so the 512 would be overkill.

My 7300GT extreme with 128mb ddr3 has more power then a 7600gs 512mb. Understand what I mean?

The ATI card is the extra appropriate card out of the two, and that's no longer purely by way of quantity of memory. certainly get the ATI one except you prefer to apply Linux. ATI's motive force help for Linux is terrible, yet once you're purely using homestead windows, that's going to be the extra appropriate card.

7600GT .... no contest !!!
GT is GDDR3 memory, the GS is GDDR2.
and the GT has 4 more pixel pipelines.
