The University of Florida would be a great resource for you. They are a land-grant college, and a lot of those have fabulous agriculture-related programs.
What you major in, specifically, depends on what sort of ranching or farming you hope to do. I've linked to their main page, and also their list of majors so you can get a feel for what they offer.
Do you have 4-H at your school now, or in your community? That can be a good place to get started.

Nothing...just go find around town ask for farmers and tell them you would like to make your own farm or ranch someday. Then, a nice one can give you some work on their place and show a few pointers or two. That kinda work can be very demanding, it's not the easy.
You could this and go to college at the same time.

i've heard that Utah State University has a fabulous Agriculture College. Although, obviously its not in Florida.
