I dont think anyone has truly answered your question.
First figure out if your motherboard and cpu support Dual Channel Memory, if it does buy 512x2 these will come in a pair, its much faster than a single 1gig stick. If you dont have support for dual channel, get the single stick.
Also if you are playing games or anything with graphics ask about low latency. If you are doing internet surfing and email dont worry about latency

I would recommend getting a single 1 GB. That way later you have the option if you want to further upgrade.
If you later want 2 GB and only two slots you could not do it with two 512, you would need to buy two 2 GB and what happend to the two 512?
As long as your memory is not Dual Channel, then you could keep one 256 installed.
I would buy 1 GB stick. it gives you more options later.

Always get one piece, especially for gaming.. No two RAM cards are the same and I have found myself with my XP machine given my Memory reference errors once in a while due to the two DRAM chips (even though they are the same) being off by the slightest amount in speed causes this error.
Also, if your pc only has two slots, you will have to throw out all current memory to upgrade again.. buy the one only..
I know it is more for one piece, but that is one of the reasons why

Hi. If the RAM is compatible just put the 1GB into slot 1 and the 256MB into slot 2.

id go for the single 1gb.
The buying chips in 2's is a leftover from when pcs needed the memory splitted equally. its not really necessary anymore. although some people will argue it gives improved performance in 2s, I dont agree, and id go for the single chip update as it leaves you free slots for updating in the future.

Dual channel (512mb x 2) is always better than single channel (1gb). However, it's also more expensive.

personally i'd pay the extra and get 1 gb.
you should check your motherboard manual and see if it will infact go up to 1gb of ram.
use the ram advisor upgrade tool at http://www.crucial.com/
