Around Shakespeare's time I think.

Before then actors were just men who would volunteer to put on a play. But about the time of Will Shakespeare there was a real demand for newer better plays (Queen Elizabeth REALLY loved them) that they started hiring men to act, and the first acting troupes were formed.
