Woodsmoke, CCR, has always been a favorite of mine, their music is easy to listen to, it's easy to play, and enjoyed by both rock and country enthusiasts!!

I must agree with bluedevil on CCR and the Eagles. Both have songs most people would enjoy.
Another two might be Chicago and Three Dog Night.

I think beck is the most versatile artist/musician around today. He can do it all: country, dance, rock, pop, hip-hop, folk, experimental noise. Eight full length albums and no two are the same.
