They call it stainless steel because it stains less than other metals.It still gets stains and needs to be cleaned.

Stainless steel has chromium in it which makes it different than regular steel. It does not rust or stain like regular steel.

Because it for all intent and purposes is a non porous Stainless surface. The surface can be easily cleaned and most health departments prefer it in commercial kitchens for that reason.
