There are over a billion Chinese people in China, and lots more all over the world. If you want answers you should narrow your questions down a bit. People's answers are going to depend heavily on where they're from. Narrow down your questions by first choosing a specific demographic group to explore (consider: age, sex, place of birth, place of residence etc). This will definitely help for the methodology section in your paper and give you more credibility.

To answer your questions:
1. It means different things to different Chinese people. So I will define it to be having a Chinese background, or roots in China at some point in your family's history.
2. Yes.
3. Many people i know define it to include the extended family. In many instances multiple generations may live under the same roof.
4. A mix between buddhism, taoism and confucionism. There are also elements of ancestor worship and superstitious beliefs. Christianity is the fastest growing religion in China. Some Chinese are athiests. I personally do not practice a religion, but have absorbed some of the buddhist philosophies and confucion ideals.
5. With respect to the Chinese in China- I don't know. With respect to Chinese North Americans (Canada specifically- Ontario)- we are given the same public education as everyone else which focusses heavily on the European influence on North America with little regard/attention to the contribution that visible "minorities" have made to this part of the world.
6. Dunno. Too broad a question.
