Well you could use some of the meat to make corned beef hash, it's really really yummy for breakfast. Chop it up and mix with some onion, potatoes, a little salt/pepper, worcestershire sauce and Tabasco. Then cook it in a frying pan until heated through or I actually like it a little crispy. Eat plain or with some more Tabasco and ketchup. Great served with fried eggs and a Bloody Mary!

...but as for that corned beef...yummmmm... I love making corned beef hash. Throw some potatoes and onions in a skillet and BAM!
