Funny that you ask. It is a processed dairy product, just like milk, cheese, and yogurt. All dairy products require refrigeration to prolong their life. Sour cream is the same. It will expire eventually. It's just to keep consumers safe, and keep people from getting food poisoning. Otherwise, people would be eating year old sour cream, and getting sick from it. =)

Lemons are sour, but not bad. Same thing with soured cream. However, it can go rancid, which is foul foul foul. Did I mention that it is foul?
