I do not like soup but my Mother makes a pretty good veggie soup with a little ground meat in it and some V 8 in it for flavor

home made cream of parsnip....sweet, rich and delicious. easy to make. include onion for extra depth of flavour. you want the recipe?
2 or 3 parsnips
small onion, optional
knob of butter
water
milk
chop peeled onion small into small pieces and sweat in butter. peel parsnip and chop into small pieces. when the onion is transparent add the parsnip and let the butter coat the pieces.
add enough water to cover to a depth of an inch or so, and add milk for a richer mix. cook gently over medium heat with a lid on.
when the veggies are soft, cool slightly, and use a liquidiser to create a smooth blend.
serve with a swirl of cream and sprinkle of finely chopped parsley.
also wonderful with grated cheese on top, or home-made croutons.
