I like the "The Cardamon Cafe" idea by Saint Bees. Check out for a herb or curry ingredient, a phrase, element, material or a thing that is unique to India only. I am not an Indian, so I have no idea of what those could be.But Saffron is a very common name that is used.
Here are some names that I could think of,

Arya
Chillies
Parata Hut

A lot of fashionable Indian restaurants in London opt for naming themselves after a popular ingredient (Tamarind, Ginger, Spice House, Masala Zone, etc). It's a great young approach, and it's easy to think of cool words that are ingredients. What about: Cardamom, Galangal, Coriander, Saffron, etc?

If you want to make it more Google-friendly and individual, try putting it with words descriptive of your type of restaurant, eg The Cardamom Cafe, Coriander Kitchen, etc.

Of course, if you want a more traditional name, there are loads of great Indian heroes from the past you could name it after! I've seen lots of places named after emperors, writers, or rebel leaders. Perhaps you could pick one from the area of India your cuisine is from?
