Typically, but not always, an executive assistant supports only one person who is at a high-level in the company (VP, President). An Admin Assistant may support 1 person at a lower level (Director, Manager) or a group/department.

An executive assistant is the personal assitant for a director or other high level executive in a company. Usually a board member or someone very high up.

An administrative assistant is much lower down the food chain and works in admin for a range of projects or for the overall company.

Executive assistants are more qualified, more respected and have much better conditions.

ie.. an executive office front end manager/ crappy pee on secretary
