...why can't I make something up? YOU made up that question. You don't even know what the current record is for the "universe's largest roller coaster", because you don't know how many roller coasters there are in the universe!

10 people. Because 10 people can make a regular roller coaster then they can also make the biggest roller coaster in the universe but will take longer time. And the biggest roller coast just has to be bigger than the biggest roller coast which is somewhere in the world.

I have absolutely no idea. Because, in my opinion, there will be no such thing as the world's largest roller coaster as after building it, there will be those who'll want to break the record and build an even larger one. So therefore, your question is potentially unanswerable.
