I would fly her somewhere nice in Europe (like Barcelona) for lunch, sight-seeing, evening meal, stay in a five star hotel, then fly her back home the next day. I'd accompany her of course.

Here's something creative that will be appreciated and you will have fun doing:
Make up a crossword puzzle and have all the hints be personal inside moments and jokes that only you two would know about. Put it on a poster board and add some clipart and some pictures to it!
The crossword puzzle could be time consuming and a bit frustrating ... you could do the same idea with a WORDSEARCH or WORDFIND puzzle.
Put your computer skills to work! Use Excel, get clipart from Yahoo Images Search, copy them, and reformat them, use a gluestick to put on posterboard.
Use graph paper, and pictures from magazines if you are not as good on the computer, and it will give it more of a homemade feeling.

I would have booked her on the first plane abroad to a hot country, a limo to pick her up from the airport, the best hotel suite would be waiting for her arrival and a slap up meal would be prepared. Then she would be pampered by the best qualified people that money could buy, and then some light shopping for us both and then an evening out. WHATEVER SHE WANTED!! IT WOULD BE HER CHOICE

Take her to Rome as she has wanted to get there for ages.

Perhaps she would be happy with a simple day with her family.
Money might make you happy, but she probably just wants to spend time with those she loves.

she likes to shop so i would take her on a big shopping spree. out to dinner at a nice restaurant.
