Wes Unsled was a center and former MVP who played with the Bullets (now the Wizards). At 6'7", he still led the league in rebounding and averaged almost 14 a game for his career. I don't know of anyone shorter who regularly played center. He was an inch shorter than Cowens, and two shorter than Wallace.
However, the positions have been fairly fluid for years, especially the difference between power forwards and centers. Some guys like Charles Barkley (listed at 6'6", but probably an inch or two shorter) played very physical power forward games that could be seen as taking on a 'center' role.

Dave Cowens
When the Celtics didn't win championships in either 1967 or 1968 a lot of people wrote them off. Russell helped the Celtics to a championship in 1969. Still, with Russell retiring as a player along with his good friend K. C. Jones things seemed down for the Celtics. But Red Auerbach found a unique talent in a guy who's probably the shortest starting center the league has ever had for more than one year, Dave Cowens. Cowens was built better for football, he looked bulky and was flat footed. But he had a burning in his soul and helped the Celtics to several more championships. Auerbach brought in Don Cheney, Don Nelson and Jo Jo White and then a year later traded for Paul Silas.

Dennis Rodman - I know he was a power forward, but Phil Jackson used him as a center from time to time, especially when Luc Longley was injured (he didn't go to Joe Kline or Bill Wennington, instead starting Rodman as a center - he was listed 6'8")
