I can think of a few reasons:

1) We can no longer take whatever is angering us and wish to stop the annoyance.

2) We use it as a defense. Some people, when they feel cornered in a survival situation or even just a simple debate, lash out.

3) It is triggered by some trauma/extreme event that we can't handle. A friend of mine lost his favorite aunt in a robbery and because of that, got into a fight with another robber that he saw across the street without thinking.

Over all, it is usually a sign of weakness as he who loses his temper usually loses control and ends up hurting/being hurt.

Yes, I think loss of control and reacting with raw emotions is a sign of mental weakness.
To "lose" ones temper, means you've chosen to abandon inhibition, ignore your conscience and disregard the consequences. It is a choice and therefore we must be held responsible for our actions. I don't believe in "temporary insanity" for this reason. One chooses to act through free will - as primal as it may be.
Exactly as a child would throw a temper tantrum, so do adults lash out in anger and spite. To play your emotions into your thoughts and actions is a habit from childhood that must be outgrown.

When we lose our temper, the act of lashing out is an example of our being uncivilized. It is akin to war which is never a pretty sight, and which hurts everybody involved. It is much better that a "cooler" head should prevail.
The source of temper tantrums is buried deep within our primal beings, our base, animal selves. To be human is to control them by our will power. Yes, inability to control our temper is a sign of weakness.

Nervous memories, as when we have given another person instruction on the possible danders for doing an action their way, in the act of transferring knowledge there is a frustration when compassion for the instructor has not been learned. this is not a weakness to have lost temper it is the nervous memory reaction.

Naturally.

The inability to control instinctual desires through force of will.

To lose one's temper is to devolve to the animalistic nature inherant in all of us, yet best suppressed. Remember that it is not that animalistic nature but its suppression that has led to humanity becoming the dominant vertebrate species on this planet.... and losing your temper puts you on the dominance level of the average snarling dog... Intimidating in the short-term, but lacking any real progressive or staying power.

To lose ones temper is to let our emotions control our actions as opposed to our reason. The (arguably, I know) highest good of human kind, and the distinguishing characteristic we possess as opposed to other species is this ability to reason. Thus by not acting with reason we are not maximizing our highest potential.

Yes, by losing your temper you have failed to check the primal emotions to fight in confrontation. Trust me, you get a lot more flys if you use honey instead of vinegar.
