As a westerner I have always heard it pronounced as lie-chee. In fact my ex husband once thought he had ordered 'light cheese' as a dessert - quite disappointed he was getting fruit!
However, perhaps the Chinese population would disagree with this pronunciation.

when working in the islands, I bought lychee in chinatown, Honolulu regularly, and heard it pronounced lie chee
