What are the skills and knowledge that a restaurant owner has to develop or bring into the business to manage its growth?

Culinary arts. Owners always end up being in the kitchen when someone doesn't show.
Human resources skills. Owners do the personnel work.
Psychology. For working with customers as well as personnel.
Food safety ( I am guessing this may be part of Culinary arts )
Office Management. ( obvious )
Advertising. ( again, obvious )
Computer skills. ( spreadsheets / charts / databases )
At least 4 years working "out front" and in the kitchen of a restaurant at the same level as one you wish to own.
There may be more, but hey, it's 6:30 am..

Personally, I wouldn't do it again for all the tea in China. It was a nightmare. You have NO life.
If I'm going to be on call at all hours, I'd put those years into getting a medical degree. Much better pay :)

i will not help you ...even though i am a restaurant owner...do your own research...find out why...guess you have a paper or something due...get off your butt next time and do the research
