What courses do I need to do? do I have to go to Uni because I can do Certificate II in Animal Studies and Certificate IV in Veterinary Nursing at TAFE what else do I need?

If you want to be a vet, you need to go to Uni and study Vet Science. Vet nursing is a whole lot different to being a Vet. You need to basically study Medicine for animals. Its the animal equivalent of being a Doctor.

Yep what others say here, schooling. Remember, a vet is a doctor after all. It takes time to become a vet. Now, you can become a vet's assistant through online classes in a matter of months or two year colleges for extensive training. This is a very interesting job. You work close with the vet and you get hands-on experience. You also make good money. Vets need qualified assistants. Consider this an option if you want to do the work of vets but with less training.

You need a degree in veterinary medicine. That is probably going to mean university. It is essentially the same as if you wanted to be a physician. Yeah, you can get a nursing degree at a small school without going to uni, but that is not the same as being a doctor. Veterinary medicine is no different. If you really want to do it, it is time to start making some visits or calls to the universities near you!
