Indian Chai Tea

Start with two saucepans. Fill one with water and loose Indian tea. Bring to a boil and let it boil gently for about five minutes. (Karen puts in about a tablespoon of loose tea per quart of water.)

In the other saucepan, start to slowly heat milk. Add:

•about 3 inches of stick cinnamon, broken up into smaller pieces.

•about 1 T. whole cloves

•about 6-10 cardamom seed pods that have been split open (you can do this by pound on them with the butt end of a heavy knife or your meat tenderizer hammer.)

•1/4 c. sugar (or to your taste)

Simmer on a low heat. The longer you let the milk and spices simmer, the more spice flavor you’ll get in the milk.

Strain the spices out of the milk (you can use a tea strainer, a metal mesh strainer or a piece of cheesecloth) into a large container or individual cups. Strain tea leaves out of the tea as well.

In each tea cup, put half of the boiled tea mixture and half of the spiced milk. If this is not sweet enough, you can add sugar. The milk mixture can be kept in the fridge for several days, as can the tea. For best results, don’t mix the tea and milk before storing them.

This is a very soothing drink. If you use decaffeinated tea, it’s a good before-bedtime beverage. What type of tea you use will strongly affect the end result, so be sure to choose a type of tea that you like. I personally like black tea best.
