I have some image galleries and was wondering if the filenames affect SEO and how search engines put them into their image search. For example, right now you cannot even tell what the photo is based off of the file name. However, I can easily change these so it's something like "date_shortdescription.jpg". Would that help my images get indexed better, or would it do nothing at all?

Filenames should be keywords seperated by hyphens:

meaningful name certainly help.
The way most search engines work, the images need to be on a document (an HTML page or other documents such as .doc, .pdf etc.) for search engine to know the releted/relevent search terms for the image besides the image name. More references from documents means better info about the image. Some webmasters create just one page for all images with image tags and related ALT and TITLE tags, caption and description only for the search engines. Clear and relevent metatags on these pages help further improving the ranking. I hope that helps.
