either they don't like the flavor or taste of meat, or they want to be environmentally sound, or they do not want to contribute to the slaughter of animals. They also do make products that taste like meat such as veggie burgers, or tofu dogs for the people that still actually like the taste of meat.

I chose to become a vegetarian because of moral and health reasons.
You do go through a withdraw period after cutting out meat because your body will crave some of the fatty acids and proteins but like every addiction your body has it does go away.
Personally I don't miss eating meat, sometimes it is hard when you smell something being cooked and you think ....mmmm....then realize its a rack of ribs. But overall I don't miss it at all. I feel better morally and I'm the healthiest I have ever been.

from the time i was very young, i never liked meat. i was always eating vegies, but would get in trouble for not cleaning my plate. i never developed a taste for meat, but eat a bit of fish, seafood, pork, or chicken sometimes. i find that i can get my protein from soy and eggs.
