I love honey, but it's kinda expensive. Sure could save a lot of money, if I could just puke it out instead...

Well the entire process is similar to making maple syrup, you have to start with a source, in this case (nectar) and you must remove the water from it. Bees are able to do this in their crop, using special enzymes and what is known as evaporative cooling. This release of water is similar to boiling the sap for maple syrup production, once you remove the water, you re left with the concentrates solution that we call honey.
I don't think this is at all possible, maybe if you were to collect lots and lots of nectar and possibly boil it to remove the water, then there is a chance you can have something resembling honey, but even at that it would not be pure honey. Bees add various antibiotic compounds to it and use enzymatic activity to cure the honey, so simple boiled nectar would not make real honey, just a sugary liquid.

Speaking as a Beekeeper (Apiculturist) with 1 thousand colonies, if you had the same enzymes in your stomach as they do, maybe so.

Too funny. Most people don't realize that honey is, essentially, bee puke (with flecks of bee crap mixed in, for good measure).

I seriously doubt it. You would have to have the digestive tract they have. Well if you were serious, you could just eat a handful of bees.
