Sounds like a fun project. How about:
N - Nurhaci
K - Kublai Khan or Kangxi
Z - Zhou (Dynasty) or Zhoukoudian (Zhoukoudian (The Cave of Peking Man) Zhoukoudian, situated 50 kilometers to the southwest of Beijing proper, is the former residence of Peking man, who lived there approximately 200,000 to 500,000 years ago. Since the discovery of a complete skull on December 2,1929, Zhoukoudian, which had more recently been noted for its production of lime, became world-famous as the "home of the Chinese ape-man." After the establishment of the People's Republic of China, the number of sightseers and scientists increased rapidly, and Zhoukoudian has become a great tourist attraction.(from www.China.org)
X - Xia or Xanada (from the poem "Kublai Khan" by Samuel Taylor Coleridge. Xanadu is the name of the Chinese province where Khan establishes his pleasure garden in the poem. (Though Kublai Khan fits into your ancient history category, the poem doesn't. But according to info under "Kublai Khan" in Wikipedia, "Kublai Khan's empire was visited by several Europeans, notably Marco Polo in the 1270s who may have seen the summer capital in Shangdu (上都 lit. upper capital or Xanadu.") So Xanadu should fit into your ancient China category.
Hope this helps - too late for me to think of anything for I or V right now - :)
