Mostly it's due to the fact that there are so many conflicts in the story:
growing up vs. being young
religion vs. nature/magic (encompassed by the Golden Carp)
choosing your own way vs. having a destiny
being tied to the earth (farmer) vs. roaming (vaquero)
cultural heritage vs. modernization

Based off of these conflicts, you can apply it to almost any generic essay topic. Also, it's a (relatively) quick read and it's easy to understand in comparison to Shakespeare or Hawthorne or most of the 'classical' authors. As a bonus, it has a lot of great passages and sentences that are easy to quote from to apply to all of those essays. All of that makes it good fodder for English classes.

Teacher make you read it because it has to do with "growing up" and "finding yourself" and most high school english classes focus on that, it is also a fairly good book, in my opinion.
