it depends on where [what zone] they are planted, what kind they are, and when you want them to be harvested. my neighbor used to plant red potaoes in sept and harvested them in Feb; and she planted irish potatoes in dec an d aharvested in may. onions are planted in late fall, or late summer...they are both very easy to grow...and cheap. there are new potatoes but my fav onion is the sweet Vidalia or Texas onions...leeks are good but tough.

depends on the area you live in my potatoes i leave in until the plant dies my onions i pull some when the are little for a meal the rest i leave until the plant go to seed then i pull then and spread out on a screen to dry were they can get air but no rain potatoes store best around 28 to 30 degrees onions about the same
