Whether or not she wants them, she's too little for finger foods!! Wait til she's 7-8 months. She's needs to get the chewing thing down before she'll be ready for finger foods.
Also, she may be teething - 7-8 months is prime time, so she may be biting more because of the pain and/or pressure on her gums, than the desire to eat finger foods.
That being said, if you still must...try Gerber puffs in the baby food aisle. They are almost impossible to choke on - they dissolve very very quickly and taste pretty good.

I always started my babies with little bits of ripe banana. It's the ultimate convenience food.. I could pop one in a Ziploc & put it in my purse. Also, a baked sweet potato! It's natural, and babies like the sweet taste. You are mentioning the signs of being ready for food... the salivating, the mimicking of chewing as you eat, and the desire to put everything in their mouth.
The link below lists readiness for starting solids. It also has a link suggesting good foods to introduce.

They have these things called fresh food feeders. The brand name is Munchkin and they are mesh and you can put anything you want in them. They snap shut and the baby sucks on them and only gets tiny pieces..My mother found them at Target and my son loved it when he was 4-5 months...Good luck!1

They sell finger foods for baby's in the baby food department, Cheerios are also good, that's the only finger foods i would give him till he was older and had teeth. still u have to watch close cause its easy for them to choke on small finger foods.

Gerber makes all sorts of finger foods, and they are pretty safe considering most of them melt in their mouths..

start giving some of whatever your eating on your finger, mashed potatoes, mashed beans, soft food, the child will let you know what they love and spit out what they don't like.gravy, scrambled eggs, nothing that would require chewing. Oatmeal, banana.Nothing too spicy.

I would very slowly try her on Cheerios. Watch her carefully, though. If she seems to be having any problems with them don't give her anymore until she's a little older.
