glutelin(oryzenin)is the principal protein of rice.
Rice also contain small quantities of albumin,globulin and prolamines.
Provitamin and vitamin A has nothing to do with any proteins(rice,wheat etc..) as it is totally a diff nutrient .

nuritive value of rice protein is of high value than wheat protein.

the rice consist of provitamin. when the body digest the rice, it'll convert this provitamin to vitamin A.
