I've always used pellets with my young convicts. Shrimp pellets or cichlid pellets that sink. Once they're in the water a few minutes, they crumble themselves. And, since they're sinking, they get down to a level where the babies can get them. I've fed them this since my first pair spawned - I fed the adults and the "dad" would take a pellet, mouth it for a bit, them spit the food out for the "kids". Since then, I haven't bothered with anything else.

My convicts are now in their fifth generation and going strong.
