I would work in the mall like the Galleria. That way you'll stay nice and cool even if the weather is incredibly hot. You'll also get to met many people since many people visit the mall in the summer.

What do you want to do? There's always retail, and I see "help wanted" signs everywhere. If you have waiting experience I just drove by Vargos and they're hiring. For just a summer job... a lot of engineering firms hire summer clerical help to give them an idea what the engineering field is like.
Be sure to tell a prospective employer that you are looking for summer work.
Back during my college days I worked construction, made pizzas, worked in an engineering firm, and even cleaned houses.

Museums, ZOO, Baskin Robbin, in the malls, just not so much outside, Texas get very hot in summer.
