Don't do something lame that every teacher and student has seen before. No offense, but if I see another volcano (hello, what does this even demonstrate. . a chemical reaction, not having anything to do with a volcano), mold on bread experiment, clock potato, egg being sucked into a bottle due to pressure. . .you get the point. Everyone likes loud noises, explosions, fire, changing colors, live animals (obviously no cruelty), or cool topics or topics that people can relate to. First, decide if you want to do a physics (movement), chemistry, earth science, biology (zoology, botany, genetics, anatomy etc. . . ), astronomy, weather, etc. . . project. Pick something unique that you are interested in yourself. Then, go online and find one of the three billion science projects you can do for this topic. Here are some suggestions: You could use the scientific method to . . .see whether people respond to stress differently when exposed to various visible light spectrums on the electromagnetic spectrum. In other words, put on a red colored light, a blue one, and a full spectrum white light and have people do some kind of activity. Then take their pulse after a set amount of time. Do this three times for each color for each person (you may even need to control more so there are less variables like only use girls between 12 and 15 years old) you would have to switch up the colored light orders so that you weren't always exposing them on the first time etc. . . you could have them do a 30 second mind game, play a video game, etc. . .
Or, if you didn't want to do health science/physics, you could . . .make your own rocket out of a bike pump and 2 liter bottles, you could create a simulated oil spill using oil and cocoa mixed together dropped into a plastic storage tub filled with salt water and then find various materials to try and clean feathers like brushes, dawn dish soap, (they actually use hair), sponges, etc. . .. You could research what real scientists use to clean animals exposed to an oil spill. Then set up the spill for your class. It'll look cool and it's kind of messy too. Then have one of those science boards behind you with pictures of real animal rescue missions and info on this. That's just some ideas. I wish I knew what category you liked best and I could suggest a specific project for it. Good luck.

do something about density... like maybe you can have a glass of water, and pour an inch of oil into the cup, and then carefully drop food coloring into the cup. it shows which objects are more and less dense than others. i do those density projects all the time. (you can also add more objects such as grapes, raisins, a coin. describe why these things are in such a position (they will not all sink to the bottom) and describe which objects they are more or less dense than

What about a study on Tornadoes? You could have examples of how a tornado forms and how is dissipates. You could also make your own tornadoes and have other people try it as well! Just check the website below! It would be a blast!

A good idea is if you get ice cubes and put food coloring in them and you observe which one melts the fastest and slowest. You should do a couple of times.
