1) Their bonds are ionic. (NaCl (salt))
The Na gives up it's one valence electron to complete the valence shell of Cl. They now have an ionic bond. However, these are not molecules.
2) They are covalently bonded. Their atoms share electrons in such a way that all of their valence shell electrons have a full shell.

Because the compounds in 1. are composed on ions:

Na+ + Cl-
Ca++ + 2Cl-
Na+ + HCO3-

while those in 2. are entirely covalently bonded as molecules:

H2O
C6H12O6
