"men were losing their 'sense of self' " - correct

You cannot make 'sense' plural unless you make 'self' plural
The 'sense of self' is singular even though you have men which is plural. It is the 'sense of self' that we are talking about isn't it?

"men were losing their 'senses of selves"? A rather awkward sentence isn't it?

I would think it is men were losing their sense of self because even though it is many men they are each losing their own sense of self

Neither.

It is "men were losing their 'sense of self' with single quotes.
