are all cattails edible? heard the leaves are up to 9 feet in the spring and in the summer they seem to be 4 to 5 ft why is that?

The cattail’s every part has uses. It’s easy to harvest, very tasty, and highly nutritious. It was a major staple for the American Indians, who found it in such great supply, they didn’t need to cultivate it. The settlers missed out when they ignored this great food and destroyed its habitats, instead of cultivating it.

They are edible. The part you eat is the hot dog shaped part that turns brown in the fall. To eat it, you need to pick it in the spring. It's actually a seed pod and is filled with tiny, fluffy seeds in the fall, once it's turned brown.

I've seen cattail leaves at least 6 ft. tall.

No, I don't believe that there are any cattails which are poisonous.

not all cattails are edible.
the reason why they grow like that is because they like humid areas like in the spring,but in the summer it is too dry for them to get the proper humidity.

yes, the yellow part can be dried out and used as a flour or meal, for breads, cakes etc.
