We are indeed, mostly "empty space"...so much so that tiny sub-atomic particles called neutrinos pass right through the spaces between the electrons and nucleii of the atoms we are made of all the time!

atoms are also extremely small, so that empty space doesn't have any real effect on the way we operate because the human body contains so many atoms

Some people are more empty space than others. Mostly between the ears.
