Sorry, my fellow Americans, but the word really should be pronounced with three syllables and a long a in the first syllable. I know that the mistaken pronunciation of the word as if it were "car-mel" has become so common it is regarded by dictionaries as acceptable, but I don't think it's preferred. (Every dictionary I've checked lists the three-syllable pronunciation first. . . which is where those that bother to distinguish list preferred pronunciations.)
One possible reason for the error -- there is a place referred to in the Bible as "Mount Carmel", and many people have either heard of that or heard of another place named after it. (Mount Carmel is where the prophet Elijah had a famous "contest" with the prophets of Baal --recorded in 1 Kings 18.)

sometimes i'll say car-mel, others i'll say car-a-mel!
its like:
toe-mae-toe or to-mah-to (tomato)
wres-ling or rass-ling (wrestling)
