timeline questions - look over the CV and see if you can piece together the person's history. Ask for an explanation of any gaps, and for a description of the non-gaps
testing of assertions. "I enjoy a challenge..." on the CV, so you say "Tell me about a time when you had to deal with a challenging situation" then cover how they coped, how they felt about it, what went wrong and right, and what they would do differently
do NOT do interviews alone. If one of the candidates presses your buttons (either they're hot, or they're just like you) you need someone else to keep a cool perspective and test them out properly

3) Why do they want to leave their present place of work (or why did they leave) and why do they want to work at your company?

you could ask them why they think they would be suitable for the position you are offering.
how would they cope with a challenge.
what qualities can they offer your firm.
are they willing to train.are they flexible
why do they want to leave their present position
check their cv and ask about any time gaps.
have they had any time off sick if so what was up. have they had any disiplinary hearings against them
any criminal record.
what do they know about your firm
