Heh, we have similar tastes. :) Well, here goes:
1. Loveless: Not everyone's cup of tea, and the anime doesn't really have an ending, but it's gorgeous.
2. Cowboy Bebop: Possibly the best English dub ever. It's mostly fun stuff, lots of standalone episodes, until the depressing last few episodes. It's about a group of bounty hunters in space.
3. His and Her Circumstances (also referred to as Kare Kano): A slow and emotional romantic school dramedy.
4. Fullmetal Alchemist: I wasn't sure what to think of this one at first, but it just got more awesome as the show progressed. About two alchemist boys who are trying to figure out how to get their bodies back to normal.
5. Azumanga Daioh: Since I'm not Japanese, the humor sometimes passed me by, but it's still a funny series. It's about a bunch of students at school - not much happens, but it's funny and very emotional near the end all the same.
6. Hellsing: About a vampire (Alucard) and a group set up to kill vampires - very violent. I've seen the original series, but not much of the Hellsing OVA, which I think might be even more violent than the original. Alucard is cool, if disturbing.
7. Witch Hunter Robin: About a group that hunts down and contains witches.
8. Peacemaker (also called Peacemaker Kurogane): I think this is near the same time period as Rurouni Kenshin, only from the perspective of the Shinsengumi. Great series, makes me wish I could find a book on the Shinsengumi written in English.
9. Gankutsuou: The Count of Monte Cristo: Based on The Count of Monte Cristo, only set in the future. Some of the funky visuals take some getting used to, but I've loved the first couple dvd volumes, even though I've never read the book.
10. Read or Die: I've seen all the OVA episodes (3 of them) and some of the tv series. I like the premise, with women who can manipulate paper due to their extreme love of books. :)
11. Tactics: mystery/fantasy with ghosts and demons and other things
12. Bleach: pretty good, up until episode 60-something, when it gets fillerish. Not sure if the fillers are over yet. I think this one promises to be scarily long, like Naruto.
13. Descendants of Darkness (aka Yami no Matsuei): A few stories taken from the manga, not the best anime ever, but with some great eye candy.
14. Trinity Blood: A few really great characters, and awesome character designs and battles. Has vampires.
That's all I can think of at the moment.

I like Bleach, Full Metal Alchemist, and Eureka Seven. My roommate says Samurai Champloo and Paranoia Agent are good, too. I just started watching Blood, and it's pretty interesting, but I'm not ready to endorse it just yet.

You've chosen some great anime already, umm... try youtube.com it has lots of anime. or go to my source listed for some great reviews.
I love studio ghibli movies, you could try "REC" or "NANA" "BLOOD PLUS" "Record of Lodoss Wars". i wouldnt watch inuyasha because the ending sucked...."Shakugan no Shana" "The Melancholy of Haruhi Suzumiya" "Zero no Tsukaima"... hope this is enough for you. ive been watching for years an these are really great.
